Lotus paste is one of the high-sugar and high-fat fillings. If the selected temperature is too low in the rapid moisture measurement method, the entire measurement time will be prolonged. One: direct drying method
1.1 Principle:
The sample was dried in an oven at 105±2°C and dried under atmospheric pressure until constant weight. The loss weight was water.

1.2 Instruments and Equipment:
1.2.1 analytical balance: Sensitivity 0.0001g (eg: HR-200 GR-200)
1.2.2 electric thermostatic oven; can control the temperature of 105 ± 2 °C.
1.2.3 Samples: glass or aluminum.
1.2.4 Dryer: use calcium chloride or discoloration silica gel as a desiccant.

1.3 Measurement Procedures:
Clean the weighing plate and bake it in an oven at 105±2°C for 1 hour. Take it out and cool it in a desiccator for 30 minutes. After constant weight, weigh on the analytical balance and record the constant weight of each weighing sample. Put 5-10 g of lotus seed sample into the weighing dish and record the weighing result. Do not cover the sample plate and bake for 3-5 hours in a 105±2°C constant temperature bath. Take out, cover the well lid, place in a desiccator to cool for 30 minutes, weigh, and record. After that, it is placed in a thermostatic drying oven and dried for 1 hour, cooled and weighed. And record it. Confirm the sample constant weight.

1.4 Calculation of Measurement Results
